14 in 2014: Homemade Granola

Making homemade granola was on my 14 in 2014 list. Why? I don’t really know. It’s just something I have always wanted to try making but never seem to get around to actually doing. When my two best friends were coming, I thought it would be good timing. It’s always nice to have things like this on hand when you have company. Homemade granola also makes a great gift.

Homemade Granola (original recipe here)

  • 2 cups old-fashion oats
  • 1/2 cup sliced almonds
  • 1/2 cup unsalted sunflower seeds
  • 1/2 cup chopped walnuts
  • 3/4 cup shredded coconut
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp flax seed
  • 1/8 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 1 cup dried fruit (I used raisins) 
Preheat oven to 325. Combine everything but oil and honey.  in another small bowl, mix oil and honey.  After stirring together honey and oil, pour mixture over oats mixture and stir well.  Spread granola on lined baking sheet and bake for 20 minutes.  When cooling, stir a couple of times to break up any large chunks.
